GOOD FOOD – Strawberry Polenta Cake

Ingredients:
  • 100g GOOD SEED Sweet & Crunchy
  • 50ml GOOD OIL
  • 50g butter
  • 175g caster sugar
  • 50g pecans, finely chopped
  • 2 large eggs
  • 100g polenta
  • 100g plain flour
  • Half tsp baking powder
  • 250g strawberries, dehulled
Directions:

Preheat Oven to 180C/350�F/Gas Mark 4.

Lightly oil a 15cm diameter cake tin and line with baking parchment. Mix the butter, oil and sugar together in a arge bowl. Add the pecans, flour and eggs and mix well. Mix in the polenta and baking powder till everything is well combined into a golden mixture.

Now fold through the strawberries and seed and pour into the cake tin. Pop into the oven then bake for about 25 to 30 mind, until risen and brown. Let cool for 10 mins before removing from tin
