Ingredients:
- 500g new potatoes
- 2 egg yolks
- 1/2 tsp. smoked paprika
- 2 tbsp. sherry vinegar
- 100ml GOOD OIL
- 100ml vegetable oil
- 50g GOOD SEED Salad Sprinkles
- 100g sun dried tomatoes
Directions:
Give the potatoes a wipe, cut in half if larger than a creme egg and put in a pan of water. Bring to the boil and let boil for 15 mins until tender.
While the potatoes are cooking make the dressing. In a large bowl combine the yolks, smoked paprika and the vinegar with a touch of salt. While whisking slowly dribble in the GOOD OIL to the mix and it should emulsify into a thick sauce (this can also be done in a food processor)
Drain the potatoes then pour over the dressing. Add the GOOD SEED and chopped sun dried tomatoes and the mayonnaise while still warm, combining well. Let sit for 10 minutes to allow the potatoes to absorb the flavours then serve with some thinly sliced serrano ham and a tomato salad.
