GOOD FOOD – Crunch Cookies

Ingredients:
- 75 g Good Seed Sweet
- 75 g Chocolate chunks
- 125 g Butter
- 75 g Granulated sugar
- 75 g Brown Sugar
- 1 Egg
- 50 g Porridge Oats
- 100 g Plain Flour
- 1/2 tsp. Baking powder
- pinch salt
Directions:
Preheat oven to 190C/ Gas Mark 5
Put the oats into a food processor then whizz until fine. Chunk the soft butter and add to the fine oats with the sugars and blend again. Add the egg and combine then sift the flour, salt and baking powder and add. Process briefly then tip into a bowl and add the chocolate chunks and Good Seed.
Drop spoonfuls of the mixture onto a greased baking sheet or parchment leaving plenty of room between blobs as they spread like crazy. Then put in the oven for 8 mins, nibbling guiltily at the sticky remnants of the bowl while they cook. They will look undercooked when you take them out the oven but this is what meks them so meltingly gooey. Let cool on the sheet for 5 mins then transfer to a wire cooling rack. Enjoy.
