GOOD FOOD – Bejeweled Cous Cous

Featured Ingredient: GOOD OIL






Ingredients:
  • 500 g Couscous
  • 6 tablespoons GOOD OIL
  • 2 Lemons, juice only
  • 600 ml Boiling Stock (Chicken or Veg)
  • 2 tablespoons Freshly Chopped Mint
  • 2 tablespoons Freshly Chopped Coriander
  • 4 Spring Onions
  • 2 tablespoon Dried Apricots, chopped
  • 2 tablespoon Flaked Almonds
  • 2 tablespoons GOOD SEED Salt
  • 2 Pomegranate, cut in half, seeds removed
Directions:

Pour the couscous into a bowl and add the lemon juice and 4 tablespoons of the GOOD OIL. Season and mix well till you have a bowlful that looks like the beach and smells like the summer.
Pour over the boiling stock or water then cover and leave on one side to sit until all the liquid has been absorbed - around 10 minutes. During this ten minutes chop up the herbs and fruits. Fluff up the cous cous with a fork then mix in all the other ingredients. Give the mix a final benediction with the last of the GOOD OIL then pour onto a plate into an alluring and flamboyant pile. Serve.
