Ingredients:
- 100g peas
- 100g redcurrants, stalks removed
- 1 tbsp white wine vinegar
- 1 tbsp Dijon mustard
- 1 tbsp GOOD OIL
- 1 tbsp vegetable oil
- 1/2 tsp salt
- 1/4 tsp freshly ground black pepper
- 200g crabmeat, picked over for shell
- 2 little gem lettuces
Directions:
Put the peas into a bowl, pour over some boiling water and leave for 5. In a large bowl whisk the vinegar, mustard with the oils to make an emulsified dressing. Add the crabmeat, peas and redcurrants and toss gently to coat. Take leaves from the little gem and cover with the crab mixture. |
